Bob's Jambalaya (serves 4) 1 pound chicken breast (cubed) 1 pound Andoullie Sausage or smoked sausage (cut in 1/2 inch chunks) 1 pound frozen, pre-cooked shrimp 1 can diced tomatoes 1/2 cup diced onion 1/2 cup diced celery 1/2 cup diced sweet pepper (green, red, yellow...whatever) 2 Tablespoons Cajun seasoning 2 teaspoons Turmeric pinch of Saffron (if you have it) 1 or 2 bay leaves 1 cup uncooked rice (white, brown, whatever you please) 1 1/2 cups of your favorite white wine In a large pot, saute the onion, pepper and celery while you prepare the chicken. Add the chicken and sausage and brown them with the veggies...about 5 minutes. Add the seasoning and stir well to coat all. Add the tomatoes, including the juice. Add the rice and the wine and stir. Bring to a boil, cover and reduce heat. Simmer covered until rice is done (about 40 minutes, or whatever the package calls for) When rice is cooked, add the shrimp, stir well, cover and simmer for another 10 minutes to heat the shrimp. This should be rather thick, not soupy. Note: Do not use Minute Rice. Andouille sausage is spicy, so go easy with the Cajun stuff unless you're brave.
